Ingredients:

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with nonstick spray or butter.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  3. In a large bowl, using an electric mixer or stand mixer, cream together the softened butter and brown sugar on medium speed until light and fluffy, about 2 minutes.
  4. Beat in the eggs one at a time, then stir in the yogurt, mashed bananas, and vanilla extract until just combined.
  5. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients until just incorporated. Do not overmix.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
