Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup (150g) packed light or dark brown sugar
- 2 large eggs, at room temperature
- 1/3 cup (80g) plain yogurt or sour cream, at room temperature
- 2 cups (460g) mashed bananas (about 4 large ripe bananas)
- 1 teaspoon pure vanilla extract
- 3/4 cup (100g) chopped nuts (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with nonstick spray or butter.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- In a large bowl, using an electric mixer or stand mixer, cream together the softened butter and brown sugar on medium speed until light and fluffy, about 2 minutes.
- Beat in the eggs one at a time, then stir in the yogurt, mashed bananas, and vanilla extract until just combined.
- With the mixer on low speed, gradually add the dry ingredients to the wet ingredients until just incorporated. Do not overmix.
- Fold in the chopped nuts, if using.
