Jerk Chicken Recipe

Jerk chicken is a delicious and popular Jamaican dish that is made with chicken that has been marinated in a blend of spices, including allspice, scotch bonnet peppers, thyme, and garlic. The chicken is then grilled or baked until cooked through.

Ingredients:

  • 1 (4-5 pounds) chicken, cut into pieces
  • 1 cup jerk marinade (recipe below)
  • 1/4 cup vegetable oil

Instructions:

  1. In a large bowl, combine the jerk marinade ingredients.
  2. Add the chicken pieces to the bowl and toss to coat.
  3. Cover the bowl and refrigerate for at least 4 hours, or overnight.
  4. Preheat the grill or oven to 350 degrees F (175 degrees C).
  5. Remove the chicken from the marinade and grill or bake for 30-40 minutes, or until cooked through.
  6. Serve hot.

Jerk Marinade:

Ingredients:

  • 1/4 cup allspice berries
  • 1/4 cup scotch bonnet peppers, seeded and minced
  • 1/4 cup thyme leaves
  • 1/4 cup garlic cloves, minced
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. In a food processor, combine all of the ingredients.
  2. Process until smooth.
  3. Store in an airtight container in the refrigerator for up to 2 weeks.
