Banana Pancakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, combine the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the mashed banana.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup batter for each pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown.
- Serve with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
